Provide leadership, development, support and motivation to the cast members, creating a positive environment that encourages ownership and accountability.
Management interns lead with a positive attitude and demonstrate commitment to Cast Members. Recognize and hold Cast Members accountable for delivering excellence in safety, courtesy, show and efficiency in a specific area of responsibility. Responsible for ensuring an environment where Guest and Cast Safety is the first filter in operational decision making. Operating areas include park and resort restaurants or catering locations and a variety of different dining styles and cuisines.
Culinary management interns are sous chefs who lead a professional culinary team in a restaurant kitchen, catering / banquets facility or in a pastry and baking production facility. May be responsible for batch cooking, a la carte or set menus, recipe development, volume and timing and mobile delivery of foods. Interact with Guests and execute on dietary and allergy needs for Guests. Monitor cooking techniques while managing day-to-day kitchen operations. Expedite kitchen flow and manage the preparation of food inventory pars. Ensure operational compliance to food preparation and safety standards, as well as adherence to applicable state and local government health regulations. Monitor product quality by tasting food, observing dining rooms, events and functions and by regularly speaking with Guests and Cast Members.
Expected to spend up to 80% of each day working in the operating area and interfacing with Guests and Cast Members.
Communicate and interfaces with Guests, front-line Cast Members, partners, vendors, leaders and peers in other lines of business as a point-of-contact for day-to-day operations.
Empowered to make day-to-day operational decisions in line with Guest, Cast and Financial expectations.
Monitor daily staffing levels and anticipate shift coverage needs.
Maintain current training proficiencies in all aspects of the operating area.
-Conduct daily pre-shift meetings to communicate relevant Guest, Cast or business information.
Responsible to monitor Cast Member performance and to inspire, recognize and coach front-line Cast Members.
Coach and develop Cast Members from different cultures, backgrounds and styles.
Internship Eligibility
Must be at least 18 years of age
Not have already completed two consecutive (spring/fall) College or Professional Internship Programs
Must possess unrestricted work authorization
Must provide full work availability
Must provide own transportation to/from work
Current Active Disney cast members must meet Professional Internship transfer guidelines (for Walt Disney World cast members this is no more than four points and one reprimand in the last six months; for Disneyland cast members this is six months of consecutive service and a performance record clear of any disciplinary issues (warnings, suspensions, etc.) for at least six months)
Currently earning a college/university degree in Culinary, or graduated within the past 12 months
Proven 2 years Culinary experience
Proven ability as a team leader within the kitchen (i.e. lead cook, shift supervisor)
Proven understanding of financial aspects of an operation
Demonstrated ability to create both classical and cutting edge (trends) food presentations
Possess knowledge of the industry and a passion for delivering an outstanding service experience.

1 year entry-level culinary leadership experience in addition to proven 2 years of culinary experience
Proven knowledge and understanding of Walt Disney World policies and procedures
Prior participation in a Disney Internship program
Demonstrated related leadership experience
Demonstrated strong presentation skills
Demonstrated multilingual skills, particularly Creole, Portuguese, Spanish and Vietnamese
Required Education
College Junior, Senior, Graduate level student OR Recent Graduate within the past 12 months
Must be enrolled in a college/university taking at least one class in the semester/quarter (spring/fall) prior to participation in the internship program OR graduated within the past 12 months OR currently participating in a Disney College Program or Disney Professional Internship
