Wherever athletes are preparing to compete, EXOS specialists are helping them get there from club team tryouts and high school championships to renowned events like NFL combine, the Olympics, and the World Cup Responsibilities The performance line cook is responsible for the daily preparation of food items for the kitchen, daily mise en place for rotating menu items, overall cleanliness of the kitchen, customer service through the interaction with athletes, all while maintaining the kitchens high standards, respect, and regard for food and nutrition. Primary Responsibilities Ability to prep creative, simple, health oriented menu items on a daily basis, implementing EXOS nutrition principles, in a sanitary and timely manner Follows recipes, portion controls, and procedures as established by the EXOS kitchen Cleans and maintains station up to standards while practicing exceptional safety, sanitation and organizational skills Has understanding and knowledge of culinary nutrition applications, and is able to adjust any food items as deemed necessary, to fit athletes/guests nutritional needs Posses creativity, desirability to learn, and has uttermost respect for food Answers, reports, and follows Executive or Sous Chefs instructions Assists with the cleaning, sanitation, and organization of the kitchen, walk-in coolers, and storage areas Performs additional responsibilities as requested by the chef or sous chef at any time Other duties as assigned Position Reports to: Performance Executive Chef and Performance Sous Chef Qualifications Required Qualifications: Culinary Arts graduate ServSafe Certification required Local certification as deemed necessary by the state, city or county Minimum 2 years restaurant experience as a prep and/or line cook Kitchen sensed, self-motivated, driven, organized, and clean Ability to receive feedback and take instructions Understanding of professional cooking, knife handling skills, and various cuisines Understanding and knowledge of safety, sanitation and food handling procedures Excellent customer service and a hospitable attitude Professional communication skills Preferred Qualifications: Culinary Nutrition degree and background preferred Understanding of Exchange System Familiarity and experience with ESHA Food Processor Ability to work in a team environment Ability to work calmly and effectively under pressure in an open kitchen environment Must be able to read, understand, and follow basic cooking directions Must be able to work some catering events, nights, and weekends during high season Commitment to quality service ADA Information: The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job Ability to speak and hear Close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus. Constant standing and walking Be able to work in a standing position for long periods of time (up to 12 hours). Be able to reach, bend, stoop and frequently lift up to 50 pounds. Continual use of manual dexterity and gross motor skills with frequent use of bi-manual dexterity and fine motor skills Working Conditions: Generally in an indoor open kitchen setting. Daily use of ESHA Food Processor and basic word, and excel computer programs. Varying schedule to include evenings, some holidays, weekends, and extended hours as business dictates. While performing the duties of this job, the employee is frequently exposed to heat/cold from the mechanical equipment.
