    Reporting Relationship: The position will report to: Kitchen Manager

    Assistant Kitchen Manager Responsibilities:

    Assist Kitchen Manager with inventory, order and receive ingredients and culinary supplies with management and vendors.

    Assist training, and appropriately disciplining associates.

    Assist in controlling food cost.

    Prepare and properly store food items for advanced production.

    Participate and monitor daily food production.

    Ensure food is stored at the appropriate temperature for the appropriate length of time and follows all food safety standards.

    Monitor proper sanitation procedures for all kitchen facilities and equipment.

    Keep kitchen clear and organized for day-to-day operation.

    Direct proper maintenance of all walk-in coolers (rotation of food products and cleanliness).

    Monitors safety of staff.

    Assist in producing and plating plates.

    Ability to work outdoors for extended periods of time (at least 8 hours/shift)

    Ability to work a flexible schedule to include AM/PM, weekends, holidays, and catering events.

    Ability to stand for extended period (at least 8 hours/shift)

    · Actively participate in weekly Production Meetings

    · Responsible for execution of the meal and understanding the timing of food production and to have all components ready for consumption.

    · Ability to cook and prepare food according to production guidelines and recipes and presentation standards.

    · Knowledge of food product, identification, and acceptable level of food quality

    · Must know methods of food preparation, cooking times, and portion sizes.

    · Have current and relevant knowledge of trends of the food service industry.

    · Assist and or Manage kitchen staff at offsite events.

    Ability to apply common sense understanding to carry out detailed written and/or oral instructions using logic and problem solving.

    Ability to write and perform daily prep list and par sheets for all shifts.

    Self-motivated, and ability to work with limited supervision.

    Meet deadline for projects and new requests.

    Maintain good working relationship with the management team, sales, and operations.

    Conduct pre-shift (daily briefing regarding operation and special activities) with kitchen staff when directed by Kitchen Manager.

    Demonstrated ability to maintain composure and take control during high-demand business circumstances.
