Responsibilities
Overseeing prep production and maintaining adequate par levels of prepared food for service
Conduct Line check and react to temperature, dates, quantity, and quality of product
Food Ordering/ Receiving and Quality Control
Complete all orders 1 hour prior to cutoff for GM review
Follow up on receiving to react to any shortages or quality issues
Input invoices daily
Perform the steps of accurate COGS prior to weekly inventory
Maintain Food Safety Programs and keep Kitchen HACCP Compliant
Maintain all coolers & storerooms to HBH specifications
Oversee line execution with a strict adherence to HBH food specifications
Write schedules to meet the demands of the restaurant
Complete schedule within budget for GMs review by Wednesday
Organize & Run Staff Meetings
Perform daily alley rallies to address previous shift performance, current shift goals and address any team issues and adjust accordingly
Determine staffing needs and set up interviews of new employees
Interview and Evaluate Candidates for Hiring
Oversee the training of new kitchen employees
Enforce uniform standards
Evaluations, counseling & development of kitchen staff
Adjust daily schedule for shift personnel to ensure optimal efficiency
Maintain a culture that encourages personal and professional growth through clear communication of standards, counseling, and a demonstration of personal responsibility for the quality of our products.
Qualifications
Previous experience in food service or other related fields
Knowledge of common food safety practices
Strong leadership qualities
Ability to thrive in a fast-paced environment
Excellent written and communication skills
