Position Title: Culinary Prep Associate / Prep Cook
Location: Ava’s Hospitality Group Commissary/Headquarters
Reports To: Culinary Director
Job Summary:
The Culinary Prep Associate / Prep Cook is responsible for the preparation and batch cooking of ingredients and dishes for Ava’s Hospitality Group's multiple restaurant locations. This role involves executing recipes accurately, ensuring food safety and quality, and maintaining a clean and organized kitchen environment. The Culinary Prep Associate / Prep Cook works collaboratively with other kitchen staff and reports directly to the Culinary Director, providing an excellent opportunity for learning and growth. This position is not customer-facing and involves daytime hours, avoiding the typical evening hours common in restaurant settings.
Key Responsibilities:
Follow standardized recipes to prepare large quantities of ingredients and dishes.
Measure, mix, chop, and cook ingredients as per the culinary guidelines.
Use various kitchen equipment, including ovens, grills, slicers, and mixers.
Ensure all food is prepared and stored according to food safety standards and regulations.
Monitor food quality and report any issues to the Culinary Director.
Label and date all prepped items accurately for proper inventory management.
Maintain a clean and organized work area at all times.
Wash and sanitize kitchen tools, equipment, and work surfaces regularly.
Dispose of waste and recycling according to kitchen protocols.
Assist in receiving and storing food supplies and ingredients.
Conduct regular inventory checks and report any shortages or discrepancies.
Ensure proper rotation of stock to minimize waste (FIFO method).
Work closely with other kitchen staff to ensure efficient and timely preparation of ingredients.
Communicate effectively with the Culinary Director and team members regarding any issues or needs.
Participate in kitchen meetings and training sessions as required.
Follow all company policies, procedures, and guidelines.
Adhere to health and safety standards in the kitchen.
Assist in other duties as assigned by the Culinary Director.
Qualifications:
Education: High school diploma or equivalent. Culinary training or certification is a plus.
Experience: Previous experience in a commercial kitchen, commissary kitchen, or similar environment preferred.
Skills:
Strong understanding of food safety and sanitation practices.
Ability to read and follow standardized recipes and instructions.
Proficiency with kitchen equipment and tools.
Good organizational skills and attention to detail.
Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
Physical Requirements:
Ability to stand for extended periods.
Ability to lift and carry heavy items (up to 50 pounds).
Ability to work in hot and humid environments.
