Job Overview
We are seeking an experienced and passionate Executive Chef/Manager to oversee the operations of our New York-style deli. This role combines culinary expertise with strong leadership and business management skills to ensure high-quality food, efficient kitchen operations, and excellent customer satisfaction. The ideal candidate has a deep understanding of traditional deli cuisine, including cured meats, fresh bagels, sandwiches, and classic Jewish-American comfort foods.
Key Responsibilities
Develop and execute a menu featuring authentic New York-style deli fare, including pastrami, corned beef, bagels, smoked fish, soups, and salads.
Maintain the highest food quality standards, taste, and presentation while ensuring consistency across all dishes.
Oversee daily kitchen operations, ensuring efficient workflow and adherence to food safety regulations and health codes.
Implement and enforce proper food handling, storage, and sanitation practices in compliance with local health department standards.
Work closely with ownership/management to develop pricing strategies and cost control measures while maintaining profitability.
Manage food inventory, vendor relationships, and ordering, ensuring fresh and high-quality ingredients.
Monitor labor costs, scheduling, and payroll to optimize staffing efficiency and budget control.
Analyze sales trends and customer preferences to adjust menu offerings and pricing accordingly.
Recruit, train, and manage kitchen and front-of-house staff, ensuring a positive and productive work environment.
Lead by example in work ethic, professionalism, and customer service.
Conduct staff meetings, performance evaluations, and training programs to improve efficiency and skills.
Ensure a welcoming, fast-paced deli environment that reflects New York-style hospitality and tradition.
Handle customer feedback and special requests, ensuring excellent dining experiences.
Oversee catering operations and special events, maintaining quality service for large orders.
Continuously refine and update the menu to balance tradition with innovation, offering seasonal specials or unique takes on classic deli favorites.
Experiment with new recipes while maintaining authenticity in New York deli culture.
Ensure proper recipe documentation and portion control to maintain consistency and minimize waste.
Qualifications & Skills
Proven experience as an Executive Chef, Chef Manager, or Head Chef in a deli, sandwich shop, or similar fast-paced restaurant.
Strong knowledge of New York-style deli cuisine and traditional Jewish-American food.
Exceptional leadership, communication, and team management skills.
Ability to handle high-volume service and busy rush hours efficiently.
Experience with food cost control, budgeting, and inventory management.
Familiarity with NYC & NYS health codes and regulations.
Passion for authentic deli culture and customer service.
Preferred Qualifications
Culinary degree or equivalent hands-on experience in deli or casual dining.
Experience managing catering services or large-scale food production.
Knowledge of traditional Jewish dietary laws (kosher practices) (if applicable).
