    Innovative, high-volume restaurant looking for a KITCHEN MANAGER/HEAD CHEF immediately! Peerless Hospitality Concepts, a family-owned restaurant group with a rich history in Tennessee dating back to 1938, is seeking a passionate and experienced Kitchen Manager/Head Chef to lead our unique-concept, full-service, casual dining restaurant and bar, BURG'r & BARREL in a historic Johnson City location. An additional full-service restaurant is slated to re-open by 2026 after renovations. As a Kitchen Manager/Head Chef, you will be instrumental in delivering exceptional scratch-made, high quality food for guest dining experiences while fostering a positive and high-performing team culture. We are looking for a dynamic individual with a proven track record in full-service kitchen/culinary management with great chef skills to contribute to our continued success.

    Responsibilities:

    Recruitment & development of Back-of-House employees

    Hire, train, empower, coach, counsel, resolve conflicts through company's fair treatment policy, discipline & terminate as appropriate

    Implement & manage all restaurant programs to ensure compliance with the SOPs including safety & sanitary regulations, all federal, state & local regulations to ensure optimal levels of quality service & hospitality are provided

    Cooking & Production for Scratch-made high quality food

    Order, requisition, count & maintain food inventory

    Develop relationships with food vendors & purveyors

    Manage the maintenance & sanitation of the food & beverage areas & equipment to comply with regulations & ensure quality service

    Maintain a high level of customer satisfaction & food quality

    Be able to perform & manage the following:

    Garnish, relish, portion, design dishes & plate garnishes

    Prepare salads & cut vegetables

    Make dressings & sauces

    Prepare various foods for batch cooking, grilling, frying & sautéing

    High-volume from scratch cooking preparation with quality using all new kitchen equipment

    Prepare speciality dishes & sauces

    Present, garnish & arrange final dishes

    Replenish & requisition supply items daily

    Ensure ingredients & cooked dishes are fresh

    Handle & store ingredients safely

    Do kitchen & prep area cleaning

    Follow & food safety & sanitation procedures

    Qualifications:

    1 or 2-year college/culinary school degree or equivalent experience or 3-5 years of employment experience in a related leadership position with experience in all kitchen areas & operations preferred

    Extensive knowledge of keeping clean & safe work areas

    Requires advanced knowledge of food hospitality principles & practices within the food/beverage & hospitality profession

    Ability to communicate effectively both verbally & written

    Ability to stand & walk for long periods & lift up to 30 pounds

    Skills handling utensils, kitchen, knife skills & kitchen equipment

    Ability to use math skills to weigh, measure & mix ingredients according to recipes

    Knowledge & training of safe food handling
