The Kitchen supervisor is responsible for the overall operations of the kitchen which includes supervising the food prep and cooking, maintaining a fully-stocked kitchen inventory while complying with safety and cleanliness regulation standards. The Kitchen supervisor should be successful in being able to manage our Bad to the Bone BBQ kitchen staff and guide them to deliver quality food on time. The Kitchen Manager is also to ensure that all orders are properly cooked, served, and our Bad to the Bone BBQ guests have a pleasant dining in and take-out experience. Kitchen Manager will support the Executive Chef with all task and be expected to work a closing schedule.
Essential Job Functions
· Manage kitchen staff and coordinate food orders
· Supervise food prep and cooking
· Check food plating and temperature
· Establish portion sizes
· Schedule kitchen staff shifts
· Order food supplies and kitchen equipment, as needed
· Train kitchen staff on prep work and food plating techniques
· Store food products in compliance with safety practices (e.g. in refrigerators)
· Maintain sanitation and safety standards in the kitchen area
· Performs other related duties as assigned by the Owner, General Manager, Pitmaster/Kitchen Boss and Assistant Manager
· Responsible for closing the kitchen nightly
· Responsible for labor audits being completed nightly
Knowledge, Skills and Abilities
· Bi Lingual is a plus · Previous experience in kitchen management, kitchen supervising, wood fire cooking · Hands-on experience with planning menus and ordering ingredients · Must be able to communicate clearly with managers, kitchen staff, and guests · Familiarity with kitchen sanitation and safety regulations
· Experience with ordering and inventory procedures · Strong organizational and communication skills · Ability to maintain composure and motivate a team during high stress rushes · Flexibility to work during evenings and weekends · Be able to reach, bend, stoop and frequently lift up to 40 pounds · Be able to work in a standing position for long periods of time (up to and more than 9 hours) · Closing the kitchen nightly is a must · Experience with Microsoft excel, word and apps
