    Matsuyoi is looking for a highly personable and energetic counter sushi chef with a passion for Japanese food to be a part of our opening team. Must have previous sushi experience. Matsuyoi is the intimate, progressive dining experience that resides above its sister restaurant, Nami Nori.

    POSITION SUMMARY

    Responsible for preparing and making all dishes for dine-in guests. Work in tandem with the counter servers and counter chefs to provide the best guest experience. Based on the progressive menu, pace the meal, prepare dishes and serve guests at the counter. Interact directly with guests to enhance their dining experience. Communicate with front of house team members. This is a tipped position.

    RESPONSIBILITIES

    Make and serve progressive menu items at guest facing counter

    Connect with each guest at the counter to ensure a special and unique dining experience

    Communicate with servers and managers regarding any extra orders, allergies, or guest updates

    Take orders from guests when necessary (ex: a server is not present and the guest has asked for something)

    Assist in training and leading Matsuyoi counter chefs

    Assist Chef de Cuisine with delegating prep

    Ensure the counter stations are set up and properly stocked with prepped items before and during service

    Ensure that all food products have been prepared correctly and are made to perfection per Matsuyoi's recipes and standards and with careful attention to any special dietary restriction or approved special request

    Maintain appropriate portion-control per recipes

    Maintain cleanliness and sanitization of food preparation area

    Maintain proper storing temperatures according to DOH regulations

    Follow proper rotation procedures according to DOH regulations - FIFO

    Complete daily side work opening and closing checklists

    Support and assist your fellow team members whenever possible

    Communicate problems and ideas to Chef on Duty and/or Manager on Duty

    Clean and maintain equipment used in food preparation, and report necessary equipment repair and maintenance to Chef on Duty

    Compensation: Commission plus hourly wage
