Department: Food and Beverage Kitchen
Reports to: Pastry Chef, Executive Chef or Other Department Manager or Director
General Purpose:
Responsible for preparing a wide variety of goods such as cakes, cookies, pies, bread etc. following traditional and modern recipes
Essential Duties:
- Responsible for food preparation for the bakery/pastry department as well as production as it relates to banquet and a la carte functions all outlets within the facility, to include all off premise functions.
- Assist in creating new dessert, pastry and bread products.
- Monitors and checks the maintenance of all bakery related equipment on a daily basis.
- Assists in maintaining a quality sanitation program.
- Assists Pastry Chef or Manager on Duty (MOD) with the ordering of all bakery related products as directed.
- Follow and comply with all facility policies, procedures and service standards.
- Ensures proper receiving, storage (including temperature setting) and rotations of food products to comply with health department regulations.
- Responsible for implementing and maintaining excellent service to achieve guest satisfaction.
- Working knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.
- Regular and reliable attendance.
- Incorporates safe work practices in job performance.
- Able to work well under pressure in a fast-paced environment.
- Able to work cohesively as part of a team.
Education/Experience:
- Certificate in culinary arts, pastry-making, baking or relevant field; or 2-3 years’ experience and/or training; or equivalent combination of education and experience.
- Able to create quality wedding cakes is an asset.
- Working knowledge of sugar work and chocolate skills is an asset.
Physical Demands:
Frequently stands and walks; uses hands; talks or hears. Regularly reaches with hands and arms, tastes or smells. Occasionally sits and stoops, kneels crawls or crouches. Frequently lifts up to 50 pounds and occasionally lifts up to 100 pounds (team lift).
Environment/Noise:
Occasionally works in wet or humid conditions (non-weather); may come into contact with toxic or caustic chemicals. Occasionally works in extreme cold or heat (non-weather); may work in outdoor weather conditions. Noise level is moderate.
Certificates/Licenses:
Food Safety and Sanitation Training.
Job Knowledge, Skill, and Ability Preferences:
- Ability to read and speak English is required in order to perform the duties of the job (e.g. the associates may be required to communicate with English speaking customers or co-workers, the manuals for the equipment the associates may use are in English).
- Ability to work long hours, with full availability in conjunction with business levels.
- Knowledge of accepted sanitation standards and applicable health codes.
