    Working Schedule: Typically 50 hours a week 7:00am-4:00pm (based on need)

    Compensation: $70,000-$75,000 (based on experience) health, vision, and dental insurance Performance based bonus program

    Job Function:

    Primarily responsible for all Pastry Production, along with ensuring all wholesale accounts are complete. Assist in maintaining an efficient fully staffed Pastry Team, and providing excellent Customer Satisfaction through Product Safety, Product Quality and Customer Service. Assist in maintaining a profitable kitchen in a clean and safe environment. Help create an atmosphere of culinary detail, along with helping to build morale and teamwork.

    Responsibilities:

    · Responsible for hiring and developing Pastry staff.

    · Responsible for setting Production Schedules based on Sales forecast for both in-house and wholesale demands while paying attention to any labor savings opportunity.

    · Maintains proper inventory control including appropriate levels, freshness, product use dates and overall organization and cleanliness of our Pastry Room.

    · Assist in establishing and maintaining Pastry Product Standards.

    · Ensure FOH team members are trained properly on all pastry and desert product offerings along with proper waste controls.

    · Takes the lead in the training of all Pastry team members in the area of foodservice skills and culinary detail.

    · Plays key role in managing food cost though line audits, inventory control and daily supervision of all Pastry staff.

    · Work cross functionally with GM to maintain Morale and Teamwork.

    · Consult with Sales Team to help develop new products to increase sales responsibly.

    · Effectively communicate with all Teams to problem solve.

    · Assist in maintaining an updated recipe book for the Pastry department and food cost models for the Pastry department.

    · Oversees the maintenance of a safe, secure and healthy work environment by establishing and enforcing standards in compliance with local and State Health Regulations and Requirements.

    · Maintains all foodservice equipment by following operating instructions and training staff on proper usage.
