    Job Description

    The Pastry Manager oversees the successful operations of Eataly North America’s operating pastry kitchens. The Manager ensures quality and product standards across North America. Reports to the Head of Pastry Operations.

    • Trains, supports, motivates, guides, and elevates the performance of the in-store Pastry Chef
    • Collaborates with the Finance Team to analyze and optimize sales, COGs, and labor and to ensure all bakeries operate within budget
    • Safeguards product quality and the successful execution of Eataly’s standard, unique recipes
    • Guarantees that pastry kitchens meet all safety, health, and sanitary standards
    • Creates and documents new on-brand recipes and items for pastry promotions
    • Travels regularly to each pastry kitchen to assess quality and to provide in-store support as needed or assigned
    • Partners with the Pastry Chefs, General Managers of QSR, and Directors of Store Operations to troubleshoot issues and implement growth strategies
    • Liaises with the Product Team and directly with vendors for product and collateral needs
    • Collaborates with the Executive Chefs to develop recipes for existing restaurants and new restaurant concepts
    • Oversees opening the pastry kitchen in new stores: partners with the Construction Team on floorplan design; assists with ordering supplies and equipment; hires and trains the team; provides ample onsite support
    • Partners with Human Resources to develop and implement programs to increase talent attraction and retention
    • Prepares updates and presentations for senior leadership on the status of the pastry department
    • Performs other duties as required or assigned
  • Qualifications

    Qualifications

    • 8+ years of experience in pastry production
    • 5+ years of experience in a manager position
    • Excellent communication, leadership, and motivation skills
    • Ability to be flexible and problem solve in a fluid environment
    • Advanced proficiency in the Microsoft Office Suite
    • Degree from a post-secondary culinary arts training program highly preferred

    JOB REQUIREMENTS

    • Ability to work a flexible schedule, including working weekends, nights, and holidays
    • Ability to lift over 50 pounds
    • Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
    • Availability to travel up to 50% of the time, for extended periods of time during new store openings

    The annual compensation for this position is $80,000 - $95,000
