We are looking for a Prep Lead to take charge of our production/prep department for the upcoming summer season. Ideal candidates have experience in large scale food production, industrial kitchens or extensive food service experience.
Responsibilities include but are not limited to:
Weekly Prep Execution:
Communicate with restaurant GM for weekly production goals
Inventory of all prep ingredients and submit orders in a timely manner
Prepare original Classic Dumpling Fillings in large quantities
Prepare large Wonton Filling batches
Staffing Duties:
Train new prep employees to company standards
Train prep employees on health codes
Supervise prep employees to maintain quality control and ensure food preparation is done in accordance with recipes.
Ensure all prep employees utilize and follow checklists and recipes for daily, weekly and monthly tasks.
Managing prep hours to meet allocated labor budget
Maintenance and Cleaning:
Daily, Weekly, and Monthly Cleaning of all prep workspaces
Equipment Maintenance for all Prep related items ; shredders, mixers, dicers, etc
