PRESERVATORY LEAD
The Preservatory at Bonton Farms supplies our farmer’s market, restaurant and outside vendors with our house made jams, pickled and pastry items. We use local fruits and make jams and pastry items at our facility.
RESPONSIBILITIES:
Prepping fruits and ingredients to prepare all jams and pickled items, consistently and without sacrificing food quality
Labeling and organizing prepared jars
Produce dessert and bakery products while following recipes and/or chef's directions consistently and efficiently with little supervision.
Ensure a high standard of food quality by efficiently utilizing products and managing food resources effectively
Assist in maintaining effective inventory levels, control prep inventories, outlet requisitions, and par levels.
Create personal prep lists for food and labor costs; oversee the preservation space and building needs in the Executive Chef’s absence, maintaining a positive and supportive attitude.
Ensure a clean and sanitary work environment and station daily, while upholding high standards of personal hygiene and adhering to proper uniform guidelines.
Exhibits excellent knowledge, understanding and application of all fundamental techniques of jams, pickled products, pastry, confectionery and baked goods.
Perform other duties as assigned.
QUALIFICATIONS:
Minimum of 1 years of related Industry experience (High production scratch bakery).
Associate degree - Baking & Pastry Arts preferred
Excellent knowledge, understanding and application of all fundamental techniques of pastry, confectionery and baked goods.
Ability to work effectively both individually and as part of a team.
Demonstrate leadership skills within your work group or station partners, displaying the ability to communicate effectively as a team player with supervisors, employees & customers, project a positive, self-motivated & professional attitude at all times.
Post-Employment - Must be able to obtain SERV Safe certification.
Must be 18 years of age or older
