Job Objective: Oversee the supervision, coordination and implementation of the high-quality, efficient production and presentation of all bakery products on a daily basis. Provide the production staff with the training and knowledge necessary to best perform their duties.
Essential Functions:
Ability to lift 50 pounds
Ability to provide leadership and guidance to the entire production department
Ability to provide continuous training and education to further the skill, knowledge and ability of the production department
Ability to adjust recipes for environmental changes and manipulate formulas for desired effects
Ability to produce all products
Ability to motivate staff to achieve production goals
Ability to follow and enforce proper safety, health and sanitation procedures and Sugar Plum Bakery policies
Ability to provide supervision, training and cross training to all production staff
Ability to maintain high production rate in order to meet market demands while maintaining quality and consistency
Availability to be scheduled during all major holidays and on weekends
Job Duties:
Maintain product cost information and controls on cost
Provide knowledge and guidance to other supervisors to aid them in achieving production goals through problem solving for efficiency and quality
Provides hands-on training and educational materials to production personnel to build upon skills and abilities
Ensure proper coverage of all shifts by providing written weekly schedule within the guidelines established by the executive director
Provide written reviews of all production personnel within the guidelines established by the Executive Director
Maintain formula files, including information on ingredients, packaging, and labor costs
Maintain and update recipe book in production area with all current products
Oversee the daily production and presentation of all bakery products to serve the retail and wholesale customer demands, assuring that all resources including labor, supplies and ingredients are properly allocated to respond to production needs.
Continuously undertakes product research and development, remains abreast of new trends, supplies, ingredients and procedures
Provides advocacy, guidance and support to all co-workers and informs the training department of any special training needs or problems
Coordinates and organizes the daily production of all bakery products, maintaining the highest quality and ensuring efficiency and productivity
Maintain inventory and inform Executive Director of production needs
Attend supervisory meetings and keep in communication with each other’s department supervisors to ensure production, retail, cake room and training needs are met
Maintain a good working relationship with all Sugar Plum staff: provide our friends and customers with quality service, observe confidentiality in all our interactions and accept any other duties as assigned by the Executive Director
Maintain accurate waste logs and submit them to the bookkeeper at end of each month
Education/Experience Requirements:
Minimum 5 years Management and baking experience
