    Job Summary

    Sushi chefs will be responsible for preparing high-quality sushi dishes for our guests while adhering to Drunken Fish recipes and maintaining an exceptionally clean kitchen. Sushi chefs will also manage proper food handling and proper storage of these high cost ingredients.

    Responsibilities

    Work closely with BKEY and management team

    Ensuring proper preparation, promptness, freshness, and quality of food and adherence to the highest quality food preparation

    Following recipes, including proper measuring, weighing, and mixing of ingredients dictated by the training manual and prep recipe sheets

    Prepares raw fish in an appropriate manner

    Makes sushi rice with perform form and consistency

    Monitors inventory of supplies and handles restocking or prep work in a timely manner

    Implementing hygiene policies and safe food handling practices

    Handle and properly store all ingredients and food

    Maintaining a clean kitchen

    Plating, garnishing, and arranging final presentations of dishes

    Assist with any other needs that may arise

    Coordinating preparation of food for large catering onsite and offsite events

    Assisting with catering and deliveries offsite

    Ensure that all opening and closing tasks are completed smoothly and thoroughly

    Responsible for maintaining a clean, safe, and organized workplace

    Accommodating allergies, dietary needs and special requests

    Assist with any marketing events, such as wedding shows, trade shows, offsite events, charity events, etc. as needed

    Follows all federal, state and local laws, codes, and regulations outlined by management and the Employee Handbook

    Skills and Abilities

    Advanced knowledge of food professional principles and standards

    Extreme attention to detail and quality

    Uphold personal appearances and professionalism and train this standard to employees

    Follow through with all assigned tasks and be flexible to accommodate quickly to newly assigned duties, including duties which may include other So Hospitality Group brands

    Ability to remain calm under stressful situations and excellent problem solving abilities

    Ability to follow verbal directions and also give clear verbal directions

    Ability to multitask and excellent time management skills

    Ability to work positively in a fast-paced environment

    Ability to be on your feet and alert for extended periods of time

    Ability to lift up to 50 lbs as needed

    Required Qualifications

    18 years or older

    Education: High school or equivalent

    High energy and passion for the industry

    2+ years professional kitchen experience preferred, sushi experience a plus

    Reliable transportation

    Must be able to work a flexible schedule including on-call, days, nights, weekends and holidays
